Ingredients

  • 1 pound Pork tenderloin
  • 3 tablespoons Olive oil

  • 1.5 cups Cherry tomatoes
  • 1 small Red onion, sliced
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat the oven to 425°F (220°C).

In a small mixing bowl, combine olive oil, lemon juice, oregano, thyme, minced garlic, salt, and black pepper to create a marinade.

Place the pork tenderloin in a large resealable plastic bag and pour the marinade over it. Seal the bag and massage the marinade into the pork. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
