Ingredients

  • 1 3-4 pounds whole chicken
  • 4 tablespoons olive oil
  • 1 lemon
  • 5 garlic cloves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 red bell pepper
  • 2 medium zucchini
  • 1 large red onion
  • 1 pint cherry tomatoes
  • 1 bunch fresh parsley

Directions

Step 1

1. Preheat your oven to 425°F (220°C).

2. Rinse the chicken thoroughly and pat dry with paper towels.

3. In a small bowl, combine 3 tablespoons of olive oil, the juice of the lemon, minced garlic from 3 cloves, dried oregano, dried thyme, salt, and black pepper. Mix well to create a marinade.
