Ingredients

  • 1 head Cauliflower
  • 3 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander

  • 0.25 teaspoon Black pepper
  • 0.25 cup Tahini
  • 2 tablespoons Lemon juice
  • 1 clove Garlic
  • 2 tablespoons Water
  • 2 tablespoons Fresh parsley
  • 0.25 cup Pomegranate seeds

Directions

Step 1

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

Remove and discard the outer leaves of the cauliflower, then cut the head into bite-sized florets.

Step 3

In a large bowl, toss the cauliflower florets with 2 tablespoons of olive oil, cumin, coriander, salt, and black pepper until evenly coated.
