Ingredients

  • 2 large aubergines (eggplants)
  • 4 tablespoons olive oil

  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 0.5 cup pomegranate seeds

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Wash and slice the aubergines lengthwise into 1/2 inch thick slices.

Arrange the aubergine slices on the prepared baking sheet. Brush each slice with olive oil on both sides and season with the minced garlic, sea salt, and black pepper.
