Ingredients

  • 1 3-4 lbs whole chicken
  • 3 tablespoons extra virgin olive oil
  • 2 lemon
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme
  • 4 garlic cloves
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 2 cups chicken stock
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Rinse the chicken inside and out and pat it dry using paper towels.

Step 3

Juice one lemon and slice the other into wedges. Set aside the wedges for later.

Step 4

In a small bowl, combine the olive oil, lemon juice, chopped rosemary, chopped thyme, minced garlic, sea salt, and black pepper.

Rub the entire chicken with the olive oil herb mixture, ensuring to coat the inside of the cavity as well.

Step 6

Place the lemon wedges and a few sprigs of rosemary and thyme inside the cavity of the chicken.

Tuck the wing tips under the body of the chicken and tie the legs together with kitchen twine.

Place the chicken on a rack in a roasting pan breast side up.

Roast the chicken in the oven for 1 to 1.5 hours, basting occasionally with the pan drippings, until an instant-read thermometer inserted into the thickest part of the thigh reads 165°F (75°C).

While the chicken rests, pour the pan drippings into a small saucepan and skim off any excess fat.

Add the chicken stock to the saucepan and bring to a simmer over medium heat.

In a small bowl, mix the cornstarch with water to create a slurry.
