  • 1000 grams Lean pork shoulder, trimmed and cubed
  • 60 ml Extra virgin olive oil
  • 125 ml Dry white wine
  • 2 sprigs Fresh rosemary
  • 4 sprigs Fresh thyme
  • 4 units Garlic cloves, minced
  • 2 leaves Bay leaves
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper, freshly ground
  • 1 unit Lemon, zested
  • 2 tablespoons Capers, rinsed and chopped

Directions

Step 1

Cut the lean pork shoulder into small, even cubes to ensure even cooking and place them in a large ovenproof dish.

Step 2

Add the minced garlic, rosemary, thyme, bay leaves, salt, and pepper to the dish, and toss until the pork is well-coated with the seasonings.

Pour the white wine over the pork and add 30 ml of extra virgin olive oil. Make sure the seasonings and wine are evenly distributed over the pork.
