Ingredients

  • 12 oz whole grain rigatoni
  • 2 tbsp olive oil
  • 1 lb lean ground beef (or ground turkey)
  • 1 medium, diced yellow onion
  • 4 minced garlic cloves
  • 1 medium, diced red bell pepper
  • 1 medium, diced zucchini
  • 28 oz canned crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 0.25 cup, chopped fresh basil leaves
  • 0.5 cup, grated Parmesan cheese

Directions

Step 1

Bring a large pot of salted water to a boil. Add rigatoni and cook according to package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic cloves, sauté for 3-4 minutes until onions are translucent.
