Ingredients

  • 1.5 cups Greek yogurt
  • 1 large Cucumber
  • 1 large Tomato
  • 0.5 small Red onion
  • 0.5 medium Bell pepper (any color)
  • 0.25 cup Fresh parsley
  • 0.25 cup Fresh mint leaves
  • 2 tablespoons Lemon juice
  • 1 tablespoon Extra virgin olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Olives (optional)
  • 0.25 cup Feta cheese, crumbled (optional)

Directions

Step 1

Wash and dry all vegetables thoroughly.

Step 2

Peel the cucumber and dice it into small pieces. You can also keep the peel on for added texture and nutrients if preferred.

Cut the tomato in half, remove the seeds, and dice into small pieces.

Step 4

Finely chop the red onion and bell pepper.

Chop the fresh parsley and mint leaves finely.
