Ingredients

  • 1 head radicchio
  • 2 cups arugula
  • 2 medium oranges
  • 1 medium grapefruit
  • 1 small fennel bulb
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley
  • 0.5 cup crumbled feta cheese

Directions

Step 1

Remove any wilted outer leaves from the radicchio. Cut the head in half, remove the core, and thinly slice the leaves into ribbons. Place the sliced radicchio in a large salad bowl.

Step 2

Add the arugula to the bowl with the radicchio.

Step 3

Peel the oranges and grapefruit, removing as much of the white pith as possible. Section the citrus fruits by cutting between the membranes to release the segments into the bowl.

Step 4

Thinly slice the fennel bulb using a sharp knife or a mandoline slicer, and add it to the salad bowl.

Step 5

In a small bowl, whisk together the extra virgin olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper until well combined to form the dressing.

Step 6

Pour the citrus dressing over the salad ingredients in the bowl and toss gently to coat evenly.

Step 7

Chop the fresh parsley and sprinkle it over the salad.

Step 8

Crumble the feta cheese over the top of the salad, adding a creamy, tangy component to the dish.

Step 9

Serve immediately as a fresh, flavorful addition to any Mediterranean meal.
