Ingredients

  • 500 grams beef sirloin, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 medium zucchini, sliced into half moons
  • 1 medium red onion, thinly sliced
  • 200 grams cherry tomatoes, halved
  • 10 leaves fresh basil leaves
  • 1 teaspoon oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 medium lemon, juiced

Directions

Step 1

Heat 2 tablespoons of extra virgin olive oil in a large pan or wok over medium-high heat.

Step 2

Add thinly sliced beef sirloin to the pan and stir fry for 2-3 minutes until browned. Remove the beef from the pan and set aside.

Step 3

In the same pan, add the remaining 1 tablespoon of olive oil. Add minced garlic and cook for 30 seconds until fragrant.

Step 4

Add the sliced red and yellow bell peppers, zucchini, and red onion. Stir fry for 4-5 minutes until the vegetables start to soften.

Step 5

Return the beef to the pan, along with the cherry tomatoes. Stir in oregano, salt, and black pepper.
