Ingredients

  • 2 pounds Pork shoulder
  • 2 tablespoons Olive oil
  • 4 whole Garlic cloves
  • 1 large Onion
  • 2 teaspoons Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Lemon juice
  • 1 cup Chicken broth
  • 12 small Corn tortillas
  • 0.5 cup Feta cheese
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 0.5 cup Fresh parsley
  • 0.25 cup Fresh mint

Directions

Step 1

Trim any excess fat off the pork shoulder and cut it into large chunks.

Step 2

In a large pan, heat olive oil over medium-high heat. Add the pork pieces and brown them on all sides for 6-8 minutes. Do this in batches if necessary.

Transfer the browned pork to a slow cooker.

Step 4

In the same pan, reduce the heat to medium. Add diced onion and minced garlic; cook for 3-4 minutes until the onion is soft.
