  • 2 lbs boneless, skinless chicken breasts
  • 2 tbsp extra-virgin olive oil

  • 4 cloves garlic cloves
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1 cup chicken broth
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup fresh parsley
  • 1 cup cherry tomatoes
  • 1 small red onion

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

In a large oven-safe pot or Dutch oven, heat the olive oil over medium heat.

Finely chop the garlic cloves. Squeeze the juice of the lemon into a small bowl, set aside.

Season the chicken breasts with salt and black pepper on both sides.

Add the garlic to the pot and sauté until fragrant, about 1 minute.
