  • 2 pounds pork bones
  • 2 tablespoons extra virgin olive oil

  • 6 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1 teaspoon whole black peppercorns
  • 10 cups water
  • 1 teaspoon sea salt

Directions

Step 1

Preheat your oven to 400°F (200°C).

Place the pork bones on a roasting pan and drizzle with the olive oil.

Step 3

Roast the bones in the preheated oven for about 30 minutes, or until they are browned.

In a large stockpot, add the roasted bones along with all the juices from the pan.
