Ingredients

  • 0.5 head red cabbage
  • 1 large carrot
  • 1 medium red onion
  • 0.5 cup white wine vinegar
  • 0.25 cup extra virgin olive oil
  • 2 tablespoons honey
  • 2 tablespoons lemon juice
  • 1 minced garlic clove
  • 0.25 cup fresh parsley
  • 0.25 cup fresh mint
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Thinly slice the red cabbage and place it in a large mixing bowl.

Step 2

Peel and grate the carrot, then add it to the bowl with the cabbage.

Step 3

Thinly slice the red onion, separating the rings, and add them to a medium bowl.

Step 4

In a small saucepan, heat the white wine vinegar over medium heat until just warm, then pour it over the sliced onions in the bowl to start the pickling process. Let it sit for about 10 minutes.

Step 5

In another small bowl, whisk together the extra virgin olive oil, honey, lemon juice, minced garlic, salt, and black pepper until well combined.

Step 6

Chop the fresh parsley and mint finely and set aside.

Step 7

Once the onion has lightly pickled, drain the excess vinegar and add the onion to the cabbage and carrot mixture.

Step 8

Pour the dressing over the slaw mixture and toss everything together to ensure even coating.

Step 9

Fold in the chopped parsley and mint gently into the slaw.

Step 10

Let the slaw sit for at least 10 minutes before serving to allow flavors to meld.
