Ingredients

  • 2 pounds Yukon Gold potatoes
  • 3 tablespoons Extra virgin olive oil
  • 3 Garlic cloves, minced
  • 2 tablespoons Fresh rosemary, finely chopped
  • 1 tablespoon Fresh thyme, finely chopped
  • 1 teaspoon Sea salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 1 Lemon, zest only
  • 2 tablespoons Parsley, chopped for garnish

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Rinse and scrub the Yukon Gold potatoes under cold water to remove any dirt. Pat them dry using a clean kitchen towel or paper towel.

Step 3

Cut the potatoes into even 1-inch cubes to ensure uniform cooking.

Step 4

In a large mixing bowl, combine the potatoes, extra virgin olive oil, minced garlic, chopped rosemary, thyme, sea salt, and freshly ground black pepper. Toss well to make sure the potatoes are evenly coated with the oil and seasonings.

Step 5

Spread the seasoned potatoes in a single layer on the prepared baking sheet. Ensure they are not overcrowded to allow even roasting.

Step 6

Roast in the preheated oven for 20 minutes. Then, remove the baking sheet, flip the potatoes using a spatula, and return them to the oven.

Step 7

Continue roasting for another 20 minutes, or until the potatoes are golden brown and crispy on the outside, and tender on the inside. You can test tenderness by piercing a potato piece with a fork.

Step 8

Once roasted, remove the potatoes from the oven. Add the zest of one lemon and gently toss the potatoes to distribute the zest evenly.

Step 9

Transfer the roasted potatoes to a serving dish and garnish with freshly chopped parsley before serving.

Step 10

Serve immediately as a delicious side to grilled fish, roasted meats, or as part of a Mediterranean-style platter.
