Ingredients

  • 1 about 4 pounds whole chicken
  • 3 tablespoons olive oil
  • 2 lemon
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 4 cloves garlic
  • 1 large onion
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup chicken broth

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Rinse the chicken inside and out under cold running water; pat dry with paper towels.

Step 3

Pour 2 tablespoons of olive oil into a small bowl. Add salt, black pepper, paprika and mix well.

Rub the seasoned olive oil all over the chicken, ensuring even coverage.

Cut one lemon in half and place it inside the cavity of the chicken along with 2 sprigs of rosemary, 2 sprigs of thyme, and 2 garlic cloves, smashed.

Thinly slice the remaining lemon and onion.
