Ingredients

  • 500 grams Fresh squid
  • 1 whole Lemon
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Fresh dill
  • 2 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 whole Bay leaf
  • 1000 milliliters Water

Directions

Step 1

Clean the squid by removing the head, entrails, and skin, leaving the white body and tentacles. Rinse well under cold water.

Step 2

Cut the squid into rings roughly 1 cm wide and set aside.

Step 3

Fill a large pot with 1000 ml of water and add the bay leaf and salt. Bring to a boil over medium-high heat.

Once boiling, add the squid to the pot and cook for 2-3 minutes, or until the squid turns opaque and tender. Avoid overcooking to prevent toughness.

While the squid is boiling, finely chop the parsley, dill, and garlic.
