Ingredients

  • 4 medium Russet potatoes
  • 3 tablespoons Extra-virgin olive oil
  • 1 medium Red onion
  • 1 medium Red bell pepper
  • 2 large Garlic cloves
  • 2 tablespoons Fresh parsley
  • 1 zest and juice Lemon
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Scrub the potatoes clean and cut them into 1/2-inch cubes.

Step 2

Bring a large pot of water to a boil. Add the cubed potatoes and blanch for 5 minutes. Drain the potatoes and set them aside to dry completely.

While the potatoes are drying, finely chop the red onion and red bell pepper. Mince the garlic cloves.

Heat the olive oil over medium heat in a large non-stick skillet.
