Ingredients

  • 4 pieces Whole wheat burger buns
  • 4 pieces Large eggs
  • 2 cups Arugula
  • 0.5 medium, thinly sliced Red onion
  • 1 large, sliced Tomato
  • 0.5 large, thinly sliced Cucumber
  • 0.5 cup, crumbled Feta cheese
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Dried oregano
  • 1 tablespoon Fresh lemon juice
  • 0.5 cup Tzatziki sauce

Directions

Step 1

In a small bowl, combine the olive oil, salt, black pepper, dried oregano, and fresh lemon juice. Whisk together to create the dressing.

Step 2

In a mixing bowl, add the arugula, sliced red onion, tomato, and cucumber. Drizzle with half of the dressing and toss to coat. Set aside.

Heat a non-stick skillet over medium heat. Add a little olive oil if necessary.
