Ingredients

  • 12 ounces whole grain pasta
  • 3 tablespoons extra virgin olive oil

  • 1 large carrot, peeled and finely chopped
  • 1 large celery stalk, finely chopped
  • 3 large garlic cloves, minced
  • 28 ounces canned crushed tomatoes
  • 0.5 cup red wine
  • 1 cup beef broth, low sodium
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley, chopped
  • 0.5 cup grated parmesan cheese

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot over medium heat.

Step 2

Add the ground beef and cook, breaking it up with a spoon, until browned, about 5 minutes. Transfer the beef to a plate using a slotted spoon.

In the same pot, add the remaining 1 tablespoon of olive oil. Add the onion, carrot, and celery. Cook, stirring occasionally, until the vegetables soften, about 7 minutes.
