Ingredients

  • 250 grams boneless, skinless chicken breast
  • 100 grams baby spinach
  • 1 small onion
  • 2 garlic cloves
  • 50 grams feta cheese
  • 10 grams fresh dill
  • 20 wonton wrappers
  • 2 tablespoons extra virgin olive oil
  • 1 liter low-sodium chicken broth
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 bay leaf
  • 1 lemon

Directions

Step 1

Finely chop the chicken breast, baby spinach, small onion, and garlic cloves. Crumble the feta cheese and chop the fresh dill.

Step 2

In a mixing bowl, combine the chopped chicken, spinach, onion, garlic, feta cheese, dill, 1 tablespoon of olive oil, salt, and black pepper. Mix thoroughly until well combined.

Step 3

Place a wonton wrapper on a clean surface and add approximately 1 tablespoon of the chicken mixture to the center.

Step 4

Moisten the edges of the wrapper with a little water, fold it over, and press to seal, ensuring there are no air pockets. Repeat with the remaining wonton wrappers and filling.

Step 5

In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat and add the chicken broth.

Step 6

Add the bay leaf and bring the broth to a gentle boil.

Step 7

Reduce the heat to a simmer and carefully add the wontons to the broth. Let them cook for about 6-8 minutes, or until the chicken filling is thoroughly cooked, and the wrappers are tender.

Step 8

Remove the bay leaf and discard.

Step 9

Squeeze the juice of the lemon into the soup and stir well.

Step 10

Adjust seasoning with more salt and pepper to taste if necessary.

Step 11

Serve the Pangsit Kuah hot, garnished with additional fresh dill if desired.
