Ingredients

  • 3 cups Old-fashioned rolled oats
  • 1 cup Raw almonds, chopped
  • 1 cup Raw walnuts, chopped
  • 0.5 cup Raw pistachios, shelled and chopped
  • 0.5 cup Pumpkin seeds
  • 0.5 cup Sunflower seeds
  • 0.5 cup Unsweetened shredded coconut
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Sea salt
  • 0.25 cup Olive oil
  • 0.5 cup Honey
  • 1 teaspoon Vanilla extract
  • 0.5 cup Dried cranberries
  • 0.5 cup Dried apricots, chopped

Directions

Step 1

Preheat the oven to 300°F (150°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the oats, almonds, walnuts, pistachios, pumpkin seeds, sunflower seeds, shredded coconut, cinnamon, and sea salt. Stir well to ensure they are evenly mixed.

Step 3

In a small saucepan over low heat, combine the olive oil and honey. Stir until completely blended and warmed through. Remove from heat and stir in the vanilla extract.

Step 4

Pour the olive oil and honey mixture over the dry ingredients and stir thoroughly until the mixture is well coated.
