Ingredients

  • 150 grams glutinous rice flour
  • 200 ml water
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 50 grams dried figs, finely chopped
  • 50 grams almonds, finely chopped
  • 30 grams dried cranberries
  • 1 teaspoon lemon zest
  • 1 pinch salt
  • 3 tablespoons sesame seeds (for coating)

Directions

Step 1

In a microwave-safe bowl, combine the glutinous rice flour and water. Mix well until smooth.

Step 2

Cover the bowl with plastic wrap, leaving a small gap for steam to escape, and microwave on high for 1 minute.

Step 3

Remove the bowl and stir the mixture. It will be partially cooked with a sticky consistency.

Step 4

Microwave for an additional 1 minute and then stir again. Repeat the process 2 more times until the dough is translucent and fully cooked.

Step 5

Stir in the extra virgin olive oil, honey, and ground cinnamon into the mochi dough while it is still warm. Mix well until evenly distributed.
