Ingredients

  • 1 pound ground chicken
  • 0.5 medium, finely chopped red onion

  • 0.25 cup, finely chopped fresh mint
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil
  • 0.5 cup plain Greek yogurt
  • 0.5 medium, grated and drained cucumber
  • 1 tablespoon lemon juice
  • 8 mini whole wheat burger buns
  • 1 medium, sliced tomato
  • 8 lettuce leaves

Directions

Step 1

In a large bowl, combine the ground chicken, finely chopped red onion, minced garlic, parsley, mint, cumin, coriander, salt, and pepper. Mix thoroughly until all the ingredients are well incorporated.

Step 2

Shape the mixture into 8 small patties, about 2 inches in diameter.

Step 3

Heat olive oil in a large non-stick skillet over medium heat.

Cook the chicken patties for about 4-5 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F or 74°C).
