Ingredients

  • 4 ears sweet corn, husked
  • 2 tablespoons extra virgin olive oil
  • 0.5 cup plain Greek yogurt
  • 0.25 cup feta cheese, crumbled
  • 2 tablespoons fresh lime juice
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon chili powder
  • 2 tablespoons fresh cilantro, chopped
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

Brush each ear of corn with olive oil using a pastry brush to ensure even coverage. This will help the corn kernels get a nice char.

Step 3

Place the corn directly on the grill and cook, turning occasionally, until the kernels are browned and tender (approximately 8-10 minutes).

Step 4

While the corn is grilling, in a small mixing bowl, combine Greek yogurt, feta cheese, lime juice, garlic powder, paprika, chili powder, salt, and black pepper. Stir until well mixed to make the Mediterranean-inspired sauce.

Step 5

Once the corn is grilled, remove it from the grill and let it cool for a few minutes. Using a brush or spoon, generously coat each ear of corn with the Greek yogurt mixture.

Step 6

Sprinkle freshly chopped cilantro over the coated corn.

Step 7

Serve immediately while warm, optionally with extra lime wedges and a little more crumbled feta on the side for garnish.
