  • 1 cup Sushi rice
  • 1.5 cups Water
  • 2 tablespoons Rice vinegar
  • 1 teaspoon Sugar
  • 0.5 teaspoon Salt
  • 1 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 1 tablespoon Capers, chopped
  • 1 tablespoon Fresh parsley, finely chopped
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Soy sauce

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear.

Step 2

Combine the rice and water in a pot and bring to a boil over medium-high heat. Reduce the heat to low, cover, and cook for 15 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.

In a small bowl, mix rice vinegar, sugar, and salt. Stir until dissolved, then fold this mixture into the cooked rice with a spatula. Allow the rice to cool to room temperature.
