Ingredients

  • 500 grams Mixed olives
  • 1 whole Lemon
  • 1 sprig Fresh rosemary
  • 2 sprigs Fresh thyme
  • 4 cloves Garlic
  • 120 ml Extra virgin olive oil
  • 1 teaspoon Crushed red pepper flakes
  • 1 teaspoon Black peppercorns
  • 1 teaspoon Sea salt

Directions

Step 1

Rinse the mixed olives under cold water to remove any excess brine. Pat them dry with a clean kitchen towel.

Step 2

Slice the lemon in half. Juice one half of the lemon and set the juice aside. Cut the remaining half into thin slices.

Step 3

Strip the leaves from the rosemary sprig and roughly chop them. Do the same with the thyme leaves.

Step 4

Peel the garlic cloves and gently crush them with the side of a knife, leaving them mostly intact while exposing the interiors.

Step 5

In a large mixing bowl, combine the olives, lemon juice, lemon slices, chopped rosemary, chopped thyme, crushed garlic cloves, and extra virgin olive oil.

Step 6

Add the crushed red pepper flakes, black peppercorns, and sea salt to the bowl with the olive mixture.

Step 7

Toss all the ingredients together until the olives are well coated and the herbs and spices are evenly distributed.

Step 8

Transfer the marinated olives to a glass jar or an airtight container. Pour any remaining marinade over the olives to ensure they are submerged.

Step 9

Seal the container and refrigerate for at least 24 hours to allow the flavors to meld, though they can be stored for up to a week. The longer the olives sit, the more intense the flavors will become.

Step 10

Serve the marinated olives at room temperature as an appetizer or snack, alongside bread or cheese for a Mediterranean-inspired spread.
