Ingredients

  • 300 grams cod fillet
  • 100 grams shrimp
  • 100 grams firm tofu
  • 1 small onion
  • 2 pieces garlic clove
  • 1 large egg
  • 50 grams whole wheat flour
  • 3 tablespoons olive oil
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 tablespoon parsley
  • 1 teaspoon lemon zest

Directions

Step 1

Rinse the cod fillet and shrimp under cold water. Pat dry with paper towels.

Step 2

In a food processor, combine the cod, shrimp, firm tofu, small onion, and garlic cloves. Pulse until the mixture is smooth and well combined.

Step 3

Transfer the mixture into a large bowl. Add the large egg, whole wheat flour, sea salt, black pepper, dried oregano, chopped parsley, and lemon zest. Mix well until thoroughly combined.

Step 4

Using your hands, form the mixture into small, flat patties, about 2 inches in diameter.

Step 5

In a large frying pan, heat olive oil over medium heat.

Step 6

Carefully place the fish cake patties in the heated oil and cook each side for about 3-4 minutes, or until golden brown and cooked through.

Step 7

Remove from the pan and place on a plate lined with paper towels to drain excess oil.

Step 8

Serve the Mediterranean-style Korean Fish Cakes warm with a side of fresh salad or steamed vegetables for a complete meal.
