Ingredients

  • 2 cups Heavy cream
  • 1 cup Unsweetened almond milk
  • 0.5 cup Erythritol sweetener
  • 1 tablespoon Vanilla extract
  • 4 large Egg yolks
  • 0.25 teaspoon Salt

Directions

Step 1

In a medium saucepan over medium heat, combine the heavy cream and almond milk. Heat the mixture until it is steaming but not boiling, stirring occasionally.

Step 2

In a separate bowl, whisk together the erythritol sweetener, vanilla extract, egg yolks, and salt until well combined and creamy.

Step 3

Slowly pour a small amount of the hot cream mixture into the egg mixture while whisking constantly to temper the eggs.

Step 4

Once tempered, gradually add the egg mixture back into the saucepan with the remaining cream, continuing to whisk over medium heat.

Step 5

Cook the mixture, stirring constantly, until it thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil.
