  • 1 large, cut into chunks red bell pepper
  • 1 large, sliced cucumber
  • 0.5 cup kalamata olives
  • 4 ounces, crumbled feta cheese
  • 2 tablespoons, chopped fresh parsley
  • 8 pieces wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent burning during grilling.

Step 2

Cut the chicken breast into 1-inch cubes and place them in a large bowl.

In a small bowl, mix olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper to create the marinade.
