Ingredients

  • 2 pieces skinless chicken breasts
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 large sweet potatoes
  • 1 teaspoon sea salt
  • 0.5 teaspoon ground black pepper
  • 4 cups mixed salad greens
  • 1 medium cucumber
  • 1 cup cherry tomatoes
  • 0.5 cup feta cheese, crumbled
  • 1 cup natural Greek yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Peel and cut the sweet potatoes into thin fries. Toss them with 2 tablespoons of olive oil, garlic powder, paprika, sea salt, and pepper. Spread them out on a baking sheet and bake for 25-30 minutes, turning halfway, until crispy and golden brown.

Step 3

While the fries are baking, pound the chicken breasts to even thickness. Rub them with 1 tablespoon olive oil, then season with salt, pepper, and half of the oregano.

Heat a grill pan over medium-high heat. Grill the chicken for about 5-7 minutes on each side, or until cooked through. Remove from heat and let rest before slicing.
