  • 15 grams, chopped fresh mint
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground paprika
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 for juice and zest lemon
  • 2 medium, deseeded and chunks bell peppers
  • 12 cherry tomatoes
  • 8 wooden skewers

Directions

Step 1

Begin by soaking the wooden skewers in water for at least 15 minutes to prevent burning.

Step 2

In a large bowl, combine the ground beef, grated red onion, minced garlic, fresh parsley, fresh mint, ground cumin, ground coriander, ground paprika, olive oil, salt, and black pepper.

Step 3

Zest and juice the lemon, then add both the zest and juice into the beef mixture. Mix well until all the ingredients are evenly incorporated.

Cover the bowl with plastic wrap and allow the mixture to marinate in the fridge for at least 20 minutes, or up to 2 hours for more flavor.

Preheat your grill or grill pan over medium-high heat.
