Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely chopped
  • 3 medium garlic cloves, minced
  • 28 ounces canned whole tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 teaspoon sugar
  • 2 tablespoons fresh basil leaves, chopped

Directions

Step 1

In a large saucepan, heat the extra virgin olive oil over medium heat.

Step 2

Add the finely chopped onion to the pan and sauté until translucent, about 5 minutes.

Step 3

Stir in the minced garlic and sauté for an additional 1 minute until fragrant.

Step 4

Pour in the canned whole tomatoes and their juices, crushing the tomatoes with your hands or a spoon as you add them to the pan.

Step 5

Mix in the tomato paste, dried oregano, dried basil, salt, black pepper, and sugar.

Step 6

Bring the mixture to a simmer, then reduce the heat to low.

Step 7

Allow the sauce to cook uncovered, stirring occasionally, for about 40 minutes. The sauce should thicken and reduce slightly.

Step 8

Taste the sauce and adjust seasoning if necessary.

Step 9

Remove the saucepan from the heat and stir in the fresh basil leaves.

Step 10

Serve immediately or allow to cool and store in an airtight container in the fridge for up to one week.
