Ingredients

  • 2 tablespoons Extra virgin olive oil
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 6 ounces Tomato paste
  • 1 cup Water
  • 1 cup Apple cider vinegar
  • 0.25 cup Brown sugar
  • 2 tablespoons Curry powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 0.25 teaspoon Cayenne pepper

Directions

Step 1

Heat the extra virgin olive oil in a medium-sized saucepan over medium heat.

Step 2

Add the finely chopped onion and sauté until softened and translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the tomato paste to the pan, stirring continuously for about 2 minutes to remove any raw tomato taste.

Step 5

Pour in the water and apple cider vinegar, whisking to combine with the tomato paste.

Step 6

Add the brown sugar, curry powder, smoked paprika, salt, black pepper, and cayenne pepper to the mixture.

Step 7

Bring the mixture to a gentle simmer, then lower the heat to medium-low and let it cook for 20-25 minutes, stirring occasionally.

Step 8

Adjust seasoning to taste, adding more salt, pepper, or curry powder if desired.

Step 9

Once thickened and well-blended, remove from heat and allow to cool slightly.

Step 10

Transfer the mixture to a blender or use an immersion blender in the pot to puree until smooth.

Step 11

Pour the curry ketchup into a sterilized glass jar or bottle and let it cool completely before sealing.

Step 12

Store in the refrigerator for up to 3 weeks, shaking well before each use.
