Ingredients

  • 1 cup Unsweetened shredded coconut
  • 0.25 cup Almond butter
  • 2 tablespoons Honey
  • 2 tablespoons Coconut oil
  • 12 whole Almonds
  • 3.5 ounces Dark chocolate (70-85% cacao)
  • 0.125 teaspoon Sea salt
  • 0.5 teaspoon Vanilla extract

Directions

Step 1

In a medium bowl, combine the unsweetened shredded coconut, almond butter, honey, melted coconut oil, sea salt, and vanilla extract. Mix until all ingredients are well incorporated.

Step 2

Using your hands, take about 1 tablespoon of the mixture and form it into a small rectangular shape, similar to a candy bar.

Step 3

Place each formed coconut bar onto a baking sheet lined with parchment paper.

Once all bars are formed, gently press one whole almond onto the top of each bar.

Place the baking sheet in the freezer for about 15 minutes to allow the mixture to firm up.
