Ingredients

  • 4 pounds whole chicken
  • 3 tablespoons olive oil
  • 1 whole lemon
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme
  • 1 tablespoon fresh oregano
  • 4 large garlic cloves
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Rinse the whole chicken under cold water and pat dry with paper towels. Ensure the cavity is clean of any giblets.

Step 3

In a small bowl, combine olive oil, juice and zest of the lemon, chopped rosemary, thyme, oregano, minced garlic, kosher salt, and black pepper. Stir the mixture to form a marinade.
