  • 14.5 ounces canned diced tomatoes, undrained
  • 6 cups low-sodium chicken broth
  • 1 leaf bay leaf
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried oregano
  • 15 ounces canned cannellini beans, rinsed and drained
  • 2 cups baby spinach
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the sliced sausage to the pot and cook for about 5-6 minutes, stirring occasionally, until browned. Remove the sausage with a slotted spoon and set it aside.

In the same pot, add the chopped onion, diced carrots, and celery. Sauté for about 5 minutes until they start to soften.
