Ingredients

  • 2 pounds Pork bones with some meat
  • 2 tablespoons Olive oil
  • 1 piece Large onion, diced
  • 4 pieces Garlic cloves, minced
  • 2 pieces Carrots, diced
  • 2 pieces Celery stalks, diced
  • 1 15-ounce can Diced tomatoes
  • 2 tablespoons Tomato paste
  • 2 pieces Bay leaves
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika
  • 8 cups Water or low-sodium chicken broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Kale, chopped
  • 2 tablespoons Lemon juice
  • 0.25 cup Fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the pork bones and cook until browned on all sides, about 8-10 minutes.

Remove the pork bones and set aside.
