  • 2 tablespoons Olive oil
  • 1 unit Large onion, finely chopped
  • 3 units Garlic cloves, minced
  • 2 units Carrots, diced
  • 2 units Celery stalks, diced
  • 3 units Tomatoes, chopped
  • 1 unit Red bell pepper, chopped
  • 1 unit Potato, diced
  • 2 units Bay leaves
  • 2 units Fresh rosemary sprigs
  • 1 teaspoon Thyme, dried
  • 1 teaspoon Cumin powder
  • 1 teaspoon Paprika
  • 6 cups Low-sodium chicken or vegetable broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 1 unit Lemon, cut into wedges

Directions

Step 1

Heat olive oil in a large pot over medium-high heat.

Step 2

Add the mutton pieces and brown them on all sides, about 5-7 minutes.

Step 3

Remove the mutton and set aside. In the same pot, add the chopped onion and sauté until translucent, about 5 minutes.

Step 4

Stir in the minced garlic and cook for another minute until fragrant.

Step 5

Add the diced carrots, celery, and red bell pepper. Sauté for 5 minutes until slightly softened.

Step 6

Return the browned mutton to the pot. Add the chopped tomatoes and diced potato, stirring to combine.

Step 7

Add the bay leaves, rosemary sprigs, thyme, cumin, and paprika, stirring well to coat the ingredients.

Step 8

Pour in the chicken or vegetable broth, ensuring that all the ingredients are covered. Add salt and black pepper.

Step 9

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, until the mutton is tender and the flavors are well combined.

Step 10

Check for seasoning and adjust salt and pepper as needed.

Step 11

Serve hot, garnished with chopped fresh parsley and a wedge of lemon on the side.
