  • 500 grams lean ground beef
  • 1 large egg
  • 60 grams breadcrumbs
  • 30 grams finely chopped fresh parsley
  • 2 cloves minced garlic
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
  • 3 medium potatoes, peeled and cubed
  • 1 large onion, chopped
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 400 grams canned diced tomatoes
  • 1 liter low-sodium chicken or vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 100 grams baby spinach leaves
  • 2 tablespoons lemon juice

Directions

Step 1

In a large bowl, combine the ground beef, egg, breadcrumbs, parsley, minced garlic, salt, and black pepper. Mix gently until well combined.

Step 2

Form the mixture into small meatballs, about 1 inch in diameter, and set aside.

Step 3

In a large pot, heat the olive oil over medium heat. Add the meatballs in batches and cook until browned on all sides. Remove the meatballs from the pot and set aside.

Using the same pot, add the chopped onion, diced carrot, and diced celery. Cook for about 5 minutes, stirring occasionally, until the vegetables are softened.
