Ingredients

  • 500 grams Chicken liver
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 2 medium Carrots, diced
  • 1 medium Red bell pepper, diced
  • 2 tablespoons Tomato paste
  • 400 grams Canned tomatoes, diced
  • 125 milliliters Red wine
  • 1 Bay leaf
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parsley, chopped
  • 1 Lemon, juice only

Directions

Step 1

Rinse the chicken liver under cool water and pat dry with paper towels. Trim off any excess fat or sinew.

Step 2

Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Step 3

Stir in the minced garlic and continue cooking for 1 minute, until fragrant.

Step 4

Add the diced carrots and red bell pepper to the pot. Cook for another 5 minutes, stirring occasionally.

Step 5

Push the vegetables to one side of the pot and add the remaining 1 tablespoon of olive oil. Increase the heat to medium-high and add the chicken liver. Sear the liver on all sides for about 3-4 minutes.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 25 minutes, stirring occasionally.

Remove the bay leaf, adjust seasoning if necessary, and let the stew rest off the heat for 5 minutes.

Just before serving, stir in the chopped parsley and lemon juice for a fresh finish.
