  • 2 pounds beef bones (preferably grass-fed)

  • 1 whole garlic bulb, halved
  • 2 bay leaves
  • 10 black peppercorns
  • 2 tablespoons apple cider vinegar
  • 1 fresh rosemary sprig
  • 2 fresh thyme sprigs
  • 1 teaspoon sea salt
  • 12 cups filtered water

Directions

Step 1

Preheat your oven to 400°F (200°C).

Spread the beef bones on a large baking sheet and roast for 30 minutes, turning halfway through, until the bones are nicely browned.

Transfer the roasted bones to a large stockpot.

Step 4

Add the chopped carrots, celery, onion, garlic, bay leaves, peppercorns, and apple cider vinegar to the pot.

Bundle the rosemary and thyme together with kitchen twine and add to the pot along with the salt.

Pour in enough filtered water to cover the bones and vegetables, approximately 12 cups.
