  • 400 grams, with juice canned whole tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped for garnish fresh parsley
  • 1 cut into wedges, for serving lemon

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Add the sliced carrots and chopped red bell pepper, and cook for 3-4 minutes, stirring occasionally.

Step 5

Mix in the green beans and sauté for another 3 minutes.
