Ingredients

  • 1 pound, trimmed and cut into 1-inch pieces green beans
  • 14.5 ounces, canned with juice diced tomatoes
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon fennel seeds
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.25 cup, chopped fresh parsley
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lemon juice

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add chopped onion, minced garlic, chopped celery, and diced carrot to the pot. Sauté for 5-7 minutes until the vegetables are tender and the onion is translucent.

Stir in the trimmed and cut green beans. Cook for another 4-5 minutes, stirring occasionally.
