Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 3 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 medium Red onion, thinly sliced
  • 1 medium Red bell pepper, thinly sliced
  • 1 medium Zucchini, thinly sliced
  • 200 grams Cherry tomatoes, halved
  • 4 cups Low-sodium chicken broth
  • 200 grams Whole-grain fettuccine
  • 100 grams Kalamata olives, pitted and sliced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Lemon juice

Directions

Step 1

Cut the chicken breasts into bite-sized pieces.

Step 2

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 7-8 minutes. Remove chicken and set aside.

Step 3

In the same pot, add the remaining tablespoon of olive oil, minced garlic, and sliced red onion. Sauté for 2 minutes until the onion becomes translucent.

Add the red bell pepper, zucchini, and cherry tomatoes to the pot. Cook for an additional 4-5 minutes until the vegetables are slightly softened.
