Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion
  • 3 garlic cloves
  • 1 large carrot
  • 2 celery stalks
  • 1 medium potato
  • 1 small head green cabbage
  • 15 ounces canned diced tomatoes
  • 4 cups vegetable broth
  • 15 ounces chickpeas
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley
  • 2 tablespoons lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Chop the onion and mince the garlic cloves. Add them to the pot, sautéing until the onion is translucent, about 5 minutes.

Step 3

Chop the carrot, celery, and potato into bite-sized pieces. Add them to the pot and continue to sauté for another 5 minutes.

Step 4

Meanwhile, core and thinly slice the cabbage. Stir the cabbage into the pot and cook for 2-3 minutes until it starts to wilt.

Pour in the canned diced tomatoes with their juice, the vegetable broth, and the drained and rinsed chickpeas.
