Ingredients

  • 28 ounces canned tomatoes, crushed
  • 4 cups vegetable broth
  • 15 ounces canned chickpeas, drained and rinsed
  • 15 ounces canned white beans, drained and rinsed
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon cayenne pepper
  • 2 cups fresh spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add chopped onions and sauté for about 5 minutes until translucent.

Step 3

Stir in minced garlic and sauté for an additional 1 minute until fragrant.
