Ingredients

  • 1 pound Lean beef sirloin
  • 2 tablespoons Olive oil
  • 3 units Garlic cloves, minced
  • 1 cup Fresh pineapple, peeled and diced
  • 1 unit Red bell pepper, sliced
  • 1 unit Red onion, sliced
  • 2 tablespoons Soy sauce (low sodium)
  • 2 tablespoons Honey
  • 1 tablespoon Balsamic vinegar
  • 0.5 teaspoon Ground black pepper
  • 0.25 cup Fresh parsley, chopped
  • 1 cup Quinoa
  • 2 cups Water

Directions

Step 1

Begin by preparing the quinoa. Rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of quinoa, cover, and reduce the heat to low. Let it simmer for about 15 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for another 5 minutes. Fluff with a fork before serving.

Step 2

While the quinoa is cooking, slice the lean beef sirloin into thin strips and set aside.

Step 3

In a large bowl, combine 2 tablespoons of olive oil, minced garlic, soy sauce, honey, balsamic vinegar, and ground black pepper. Mix well.

Step 4

Add the beef strips to the marinade and toss to coat. Let it marinate for at least 10 minutes.

Step 5

Heat a large skillet over medium-high heat. Add the marinated beef strips and cook for about 5 minutes, stirring occasionally until the beef is browned and cooked through. Remove the beef from the skillet and set aside.

Step 6

In the same skillet, add the red bell pepper, red onion, and diced pineapple. Sauté for 5-7 minutes, or until the vegetables are tender and the pineapple is slightly caramelized.

Step 7

Add the cooked beef back into the skillet with the vegetables and pineapple. Stir to combine and heat through.

Step 8

Remove from heat and sprinkle with freshly chopped parsley.

Step 9

Serve the Mediterranean Hawaiian Barbecue Beef over the cooked quinoa.
