Ingredients

  • 1 piece whole wheat pie crust
  • 1 tablespoon extra-virgin olive oil
  • 0.5 cup red onion
  • 2 cups spinach leaves
  • 1 cup diced cooked ham
  • 0.5 cup feta cheese
  • 0.5 cup gruyere cheese
  • 4 pieces large eggs
  • 1 cup low-fat milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon dried oregano

Directions

Step 1

Preheat your oven to 375°F (190°C). Place the whole wheat pie crust into a 9-inch pie dish.

Step 2

In a skillet, heat the extra-virgin olive oil over medium heat. Add the sliced red onion and sauté until translucent, about 5 minutes.

Step 3

Add the spinach leaves to the skillet with the onions and cook until wilted, about 2 minutes. Remove from heat and set aside.

Step 4

Layer the bottom of the pie crust with the sautéed onions and spinach. Next, add the diced cooked ham and sprinkle the feta cheese and gruyere cheese evenly over the top.

Step 5

In a mixing bowl, whisk together the eggs and low-fat milk. Season with salt, ground black pepper, and dried oregano. Continue to whisk until the mixture is well blended.

Step 6

Pour the egg mixture over the fillings in the crust, ensuring all ingredients are evenly covered.

Step 7

Place the quiche in the preheated oven and bake for 40 to 45 minutes, or until the center is set and the top is golden brown.

Step 8

Remove the quiche from the oven and allow it to cool for at least 10 minutes before slicing.

Step 9

Serve the quiche warm or at room temperature, as desired.
