Ingredients

  • 250 grams Shrimp
  • 2 tablespoons Fresh herbs (parsley and dill)
  • 1 clove Garlic
  • 1 teaspoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon White pepper
  • 120 grams Rice flour
  • 30 grams Tapioca starch
  • 150 milliliters Boiling water

Directions

Step 1

Peel and devein the shrimp. Pat them dry with paper towels and mince finely.

Step 2

Finely chop the fresh herbs (parsley and dill) and garlic.

Step 3

In a bowl, combine minced shrimp, chopped herbs, garlic, olive oil, salt, and white pepper. Mix well to ensure the shrimp are evenly coated with the seasonings.

Step 4

In a separate large bowl, combine rice flour and tapioca starch.

Step 5

Carefully pour the boiling water into the flour mixture while stirring continuously to form a sticky dough.

Step 6

Once the dough is cool enough to handle, knead it until it's smooth and elastic.

Step 7

Divide the dough into small, even portions. Roll each portion into a ball and then flatten it into a thin circle, approximately 3 inches in diameter.

Step 8

Place a teaspoon of the shrimp mixture in the center of each circle. Fold the dough over the filling to form a half moon, then pleat the edges to seal the dumpling securely.

Step 9

Prepare a steamer lined with parchment paper or cabbage leaves to prevent sticking.

Step 10

Place dumplings in the steamer in a single layer. Steam over boiling water for 7-10 minutes or until the dumpling skin becomes translucent and the shrimp filling is cooked through.

Step 11

Serve warm with your choice of dipping sauce, such as a light soy sauce or a mixture of lemon juice and olive oil for a Mediterranean twist.
